The grease will naturally flow out from under the meat. Place one pouch in the pooling grease for 15 seconds, then turn the pouch over for 15 seconds,  this gives maximum and quickest absorption.  Expert level use, very slightly tip the pan to get the grease to flow out even more and pool up.  Place the pouch in the pool, Once the grease is absorbed, 15-30- seconds, remove from pan and discard in trash.
